In Chinese western city Lanzhou, the morning of the Hui ethnic group usually begins with a steaming bowl of beef noodles.
回族是中國分佈最廣的少數民族,呈現“大分散,小聚居”的居住模式,在中國絕大多數縣都有分佈,西部地區人口最多。
The Hui ethnic group is the most widely distributed minority group in China. They are scattered across the country but generally settle in concentrated communities within a region. Hui people can be found in the majority of counties throughout China, with the highest population concentration in the western regions.
分佈在中國西北的回族多以麵食為主。回族麵食的種類繁多,其中最為人知的是蘭州牛肉麵,長期以來各民族共同發明並傳承發展了這一製作技藝。直至上世紀初葉,回族師傅馬保子又對傳統牛肉麵的製作和調湯進行成功改良,最終形成“一清(牛肉湯清)、二白(蘿蔔片白)、三紅(辣椒油紅)、四綠(蒜苗和香菜綠)、五黃(麵條黃亮)”的獨特風格。
The diet of Hui ethnic group in northwest China centers around food made from wheat flour. Despite such food's variety, the most well-known is Lanzhou beef noodles. Over time, different ethnic groups have collectively invented and passed down the techniques for making this dish. In the early 20th century, a Hui master named Ma Baozi improved the preparation and broth of traditional beef noodles, ultimately creating a unique style characterized by clear beef broth, white radish slices, red chili oil, green garlic sprouts and cilantro, and bright yellow noodles.
