作品簡介:夏日清晨,鰲江江邊,隨著潮水漸漸退去,灘塗上逐漸熱鬧起來,長相呆呆、醜萌醜萌的小傢夥——闌胡閃亮登場,它們扭動著身子,划動雙鰭在泥灘上、蟹群間歡蹦亂跳。闌胡又名彈涂魚、跳魚,長二三寸;肉質細膩爽口,是溫州人最喜愛的涂頭小鮮之一。

機敏、善跳的闌胡,想徒手捉它可不是容易的事,稍有風吹草動就會迅速躲到洞裏面去。不過這可難不倒討海為生的海邊人,身懷絕技的漁民揮舞著特製的“三本鉤”或“四面鉤”等魚竿,鎖定十多米外的與泥地融為一體的闌胡,快速把帶著鉤子的長桿一甩,平均只需八分之一秒的時間,以肉眼都無法跟上的速度,起鉤將一條闌胡攔腰鉤住,整個動作一氣呵成,又快又準又狠,讓人看得是目瞪口呆。

炒正宗的“闌胡鹽”掌握好火候是關鍵:用小火慢煨出來的“闌胡鹽”鮮、香、酥、脆,還因為足夠鹹,易於存放。

On a summer morning, by the edge of the Ao River, as the tide gradually recedes, the mudflat becomes lively. The awkward and cute little creatures called Lanhu shine and appear. They wriggle their bodies, flap their fins, and happily jump around in the mud and among the crab groups. Lanhu, also known as Dan Tu Yu or Jumping Fish, measures about two to three inches. With delicate and tasty flesh, it is one of the favorite fresh delicacies among the people of Wenzhou.

Lanhu is agile and skilled at jumping, making it quite difficult to catch barehanded. At the slightest disturbance, it quickly hides in its burrow. However, this doesn't deter the coastal people who depend on the sea for their livelihood. Skilled fishermen wield specially made"three-hook" or"four-way hook" fishing rods. They lock onto the Lanhu, which blends seamlessly into the mud about ten meters away, and swiftly cast the pole with the hooked rod. This whole action takes only a fraction of a second, at a speed that is too fast for the naked eye to follow. They hook the Lanhu right in the middle, completing the whole maneuver swiftly, accurately, and fiercely, leaving spectators astounded.

The key to stir-frying authentic"Lanhu Salt" lies in mastering the heat. The"Lanhu Salt" slowly simmered over low heat is fresh, fragrant, crispy, and crunchy. Additionally, it is adequately salty, making it easy to store.
